On April 27th we celebrate Kingsday in the Netherlands. This year I made Kingsday cupcakes for the occasion. A favorite normally to sell on a jumble sale, but sadly there weren’t any ‘vrijmarkten’ this year. But we had a Koningsdag cupcake at home to celebrate the day.
The cupcakes are simple, but delicious vanilla cupcakes with yogurt in them. Topped with butter cream and orange edible confetti. The recipe is from the cookbook ‘Alle dagen feest!’ from Xenos.

The cupcakes were easy to make, the recipe was clear. I’ve changed the topping slightly. I didn’t have orange food coloring at home to make the butter cream orange. So I kept the butter cream white and topped it with the orange confetti.

Kingsday Cupcakes
Allergies: wheat, gluten, dairy, egg.
Ingredients
100 grams butter
185 grams white castor sugar
125 ml yogurt
2 eggs (room temperature)
225 grams self-raising flour
1 teaspoon baking powder
1 sachet of vanilla sugar
70 grams butter
140 grams powdered sugar
1-2 tablespoons milk
Orange edible confetti
Instructions
Cream the butter, white castor sugar and a few spoons of the yogurt until the sugar has dissolved.
Clutch the eggs. Pour them in the bowl with the butter mixture and whisk. Add the remaining yogurt and stir. Then add the self-raising flour, baking powder and vanilla sugar. Fold in with the rest.
Scoop the cupcake batter in the cupcake tin. Bake 20 minutes in a preheated 180°C/356°F oven. Let cool down.
Whisk the butter until soft. Add half of the powdered sugar and mix. Then add the remaining of the powdered sugar and a tablespoon of milk. Beat until it’s a smooth cream. If needed add an extra tablespoon of milk.
Place a big dollop of buttercream on each cupcake. Sprinkle with the orange confetti and serve!

I’ve worked on and off in the Netherlands and Belgium. One of my first projects was for Orange (mobile phones) in Belgium – with a Dutch company partner. The Brits were so bemused by the Orange on Kings Day – and the Dutch kept telling us the company was named for them! So I love these cakes as they take me back!
I love how cheerful and colorful these are!
