Yuri made us a croque madame sandwich, and it was delicious. He also prepared us a croque monsieur sandwich. So we could do croque monsieur vs croque madame! So what is a croque madame? Well it’s basically a grilled cheese sandwich with bechamel and a baked egg. So a grilled cheese sandwich with extra, as the French make it.

The recipe for the croque madame comes from the cookbook Het Grote Kinderkookboek from Karin Luiten. You don’t need a ton of ingredients. You need slices of white bread, slices of ham, grated matured cheese, crème fraîche, butter, pepper and eggs.

Croque Madame Recipe

Allergies: gluten, wheat, egg, pork, dairy.
Ingredients
6 slices of white bread
3 slices ham
100 gram grated matured cheese
2 tablespoons crème fraiche
Butter
Pepper
3 eggs
Instructions
Put a layer of butter on each slice of bread.
Place 3 slices of bread on a baking sheet. Butter side up. Place on each slice of bread a slice of ham. Top each slice with grated cheese. Use ¾ of the grated cheese.
Place a slice of bread on the cheese. Butter side down.
Mix the grated cheese with the crème fraiche and season with pepper. Add this as a layer on top of the bread.
Bake in a preheated 220°C/428°F oven for 15 minutes.
In the meantime, melt some butter in a frying pan. Bake 3 eggs sunny side up. Place these on top of the grilled cheese sandwiches. Serve!
