Pancake Rolls with Salmon

We love pancakes in our household and especially pancake rolls. This time I stuffed the rolls with smoked salmon and cream cheese, thus serving pancake rolls with salmon. I served this with Easter, but they also make a good breakfast on a Sunday or an appetizer before dinner.

The salmon and cream cheese are a golden combination. They also pair perfect with a pancake. Not much else is needed with this combination. The pancake mix rolls are made with pre-packaged pancake mix. But if you rather make your pancakes from scratch that’s fine also. This recipe is from Koopmans.

Another delicious pancake is this Peach Dutch Baby, Avocado Strawberry Banana Pancakes or the Pancake Surprise Cake. Other recipes to make your Easter table complete are Blackberry Mascarpone Tart and Spinach Pie. As a drink this Blue Latte would be fun to serve.

Well it’s an easy to make recipe, that hardly can go wrong. Even if you would make your pancakes from scratch. Didn’t have enough smoked salmon, so will buy more the next time. 100 grams was not enough.

Allergies: wheat, gluten, salmon, dairy, egg

Ingredients

1 package of pancake flour

800 ml milk

3 eggs

Oil (for cooking)

1 package of cream cheese

150 grams smoked salmon

Instructions

Add the pancake flour and half of the milk to a bowl. Whisk until smooth. While still whisking add the remaining milk and the eggs.

Bake pancakes from the batter. Large ones, not American style pancakes.

Top the pancakes with cream cheese and smoked salmon. Roll them up. Slice the rolls into 3 centimeter pieces.

  • Can substitute pancake mix with your own homemade pancake mix.
  • Can be served as breakfast, with a brunch or lunch or as an appetizer.
  • Enough for 3 persons if being served as breakfast, more persons if not the only thing being served.
