When you love to eat pancakes, these avocado strawberry banana pancakes are a welcome variation to your repertoire. They’re gluten free and full of vitamins. These spelt flour pancakes are without baking powder and will serve perfectly as breakfast. The added fruit makes them sweet, light flavored and healthy. Kids will love them; they can even help prepare them.
The avocado banana pancakes have no flour in them, but are prepared with spelt flour, milk, eggs and a bit of salt. Make a puree of avocado, strawberries and banana. Add these to the prepared crepes to give them a fruity and flavorful taste.

Avocado Strawberry Banana Pancakes
Allergies: lactose, egg, strawberry.
Ingredients
250 grams spelt flour
500 ml milk
4 eggs
A bit of salt
1 ripe avocado
4 strawberries
1 banana
Instructions
Add the spelt flour to a bowl. Pour in half of the milk. Mix well into a lump free batter. Then add the eggs one at a time. Pour in the remaining milk and add the salt. Mix again into a lump fee batter.
Add a bit of oil to a pancake pan and bake pancakes until the batter is gone.
Mash the avocado, banana and strawberries with a fork.
Cover each pancake with fruit puree. Roll the pancakes up.
Serve and enjoy!
