In week 17 of 2021 we celebrated Kingsday, a fun Dutch national holiday. At the end of the week Yuri’s spring break started and we went on vacation.
Week 17 2021
Monday
In preparation for our dinner on Wednesday I already made Pointed Cabbage on Sauerkraut with Apple, Garlic Mayonnaise and Mustard seeds. All from the cookbook Groene Burgers. We had leftovers for dinner.
Tuesday
It was Kingsday, a national holiday, so no work or school. The regular ‘vrijmarkten’ were cancelled though. In the morning I made Kingsday Cupcakes and Cream Caramel for breakfast. The cupcakes come from the cookbook Alle Dagen Feest and the cream caramel from the I Love My Slowcooker cookbook. Paul and I drove the ANWB Lek en Linge Route. Before we started we got a drink at Starbucks and lunch from La Place. We had superb weather and had Dutch apple pie at the Koffie molen at Streefkerk. Before returning home we got take out Chinese.
Wednesday
We had a fried mushroom-quinoaburger for dinner. For which I had prepared the condiments on Monday. On this day I also made Roasted Pecan Nuts for the burger. All from the cookbook Groene Burgers. It was delicious, worth all the preparations.
Thursday
Made two meals for dinner this day, namely lasagna with Asparagus & Egg and a Vegetable Burger. The first recipe is from the cookbook Lasagne, the second from the cookbook Heerlijke Hamburgers. We used fresh asparagus for the lasagna, it was the season for it.
Friday
Made a Spiced Bread Pudding in the slowcooker. A perfect breakfast and lunch. Made the cake for a gift for my mom. We had fries, snacks and a kroket for dinner.
Saturday
Finished the Mother’s Day Cake which I gave to my mom ahead for Mother’s Day (which was in a week). She loved the cake. In the afternoon we started our Fletcher Road Trip. First stop Willibrordhaeghe hotel at Deurne. We had a drink and bittergarnituur on the terrace in the afternoon. Then we had a 3-course dinner in our room. Restaurants were only allowed to serve people on their terrace till 6pm. I got all 3 courses on serving plates and walked with them to our room. It was all delicious.
Sunday
We got a plate full of delicious items at the breakfastbuffet and then walked with it to our room. For Yuri we arranged a knapzak with lunch to have on our room. Paul and I drove the ANWB Kempenroute and had lunch with chicken ragout and a ginger pancake. Somewhat later at another place we had the most delicious fries. For dinner we got wraps and a quiche at a supermarket.
