This white chocolate cookie is delicious! You can easily share it with others, since it’s as large as your baking tray. So plenty to share! You could also call it a cake, since it’s so enormous. The cookie is topped with confectioner’s cream and fruit. Making it extra delicious and perfect as a treat or dessert with Easter.

The cookie is made with butter, cane sugar, maple syrup, eggs, flour, salt and baking powder. Added to the cookie are pecans and white chocolate for flavor, to make it a real cookie. To give it a fresh, fruity flavor you add confectioner’s cream, grapes, strawberries, raspberries and mango. The recipe is from the Lidl website.

The dessert is really delicious! It didn’t really last long in our house. I used less fruit than stated in the ingredients. I still had some leftover confectioner’s cream from another recipe. So I did not test the making the confectioner’s cream part of the recipe. The cookie recipe I made exactly as stated. Only change was that I baked the cookie on 180°C instead of 170°C, since my oven doesn’t have that temperature.

White Chocolate Cookie Recipe

Allergies: fruit, dairy, gluten, wheat, egg, nuts.
Ingredients
300 grams butter
250 grams cane sugar
1 tablespoon maple syrup
2 eggs
450 grams flour
A bit of salt
1 package baking powder
50 grams roughly chopped pecans
150 grams roughly chopped white chocolate
500 ml milk
100 grams sugar
4 egg yolks
100 grams grapes
2 packages vanilla sugar
100 grams strawberries
60 grams flour
½ mango
100 grams raspberry
Instructions
Beat butter, cane sugar, maple syrup, flour, eggs, salt and baking powder into a cookie dough. Knead the pecans and white chocolate through the dough.
Cover the whole baking sheet with the cookie dough, you want a really large cookie. Bake in a preheated 180°C/356°F for 35 minutes. Let the cookie cool down.
In the meantime heat the milk. Make sure the milk doesn’t boil. In a bowl mix the egg yolks with sugar, vanilla sugar and flour. Add a bit of the hot milk and stir until the milk has dissolved.
Then add the rest of the milk and stir until smooth. Pour into the saucepan and bring to a boil, while continually stirring until it has the consistency of a thick cream.
Pour the cream into a cold bowl and cover with fling foil. Place in the fridge for at least an hour.
Cover the cookie with the confectioner’s cream and top with the fruit.
