A different way to serve red beets. I wanted to present red beets in a non-traditional way, normally it’s just cooked red beets. In comes this sweet and sour red beets recipe. A totally different, but delicious way to serve red beets as a side dish. Presenting a veggie in a different way, can give you a new love for that vegetable. It’s a hit-and-miss matter. This sour red beets was a hit, luckily.
The sweet and sour red beets are flavored with apple vinegar, sugar and ginger. The apple vinegar adds the sour part, the sugar takes care of the sweet part.
Boodschappen is a website from several grocery stores, with tons of recipes on it. It’s where this recipe is from, only I cut it out of the paper version.

Sweet and Sour Red Beets Recipe
Allergies: beets, ginger.
Ingredients
200 ml apple vinegar
200 ml water
40 grams sugar
2 centimeters of ginger
2 raw beets
Instructions
Peel and clean the red beets. Slice them thinly with a mandolin. Slice the ginger.
Boil ginger slices, apple vinegar, water and sugar together for 4 minutes, until the sugar has resolved. Leave to cool down a bit. Place red beets in a mason jar, pour the lukewarm vinegar mix over the beets. Let cool down completely. Turn on the lid and leave it for a night before using.
Notes:

- Enough for 2 to 3 persons as a side dish.
- You can replace apple vinegar with white wine vinegar.
- Can be kept for 2 weeks in the fridge.
