We love juices and smoothies in our household. So I make them about once a week. The melon-coconut juice is a healthy soft and sweet juice, which every melon and/or coconut lover will enjoy. The recipe is from the cookbook ‘Sappen & Shakes’. They’re actually for a juicer, but since I don’t have one, I usually make it with my blender or food processor.

I made a few adjustments to the recipe, since I didn’t have enough of all the items. For the juice I halved the number of passion fruit, added coconut milk and lychee syrup, since I didn’t have enough coconut water. I used canned lychees.

Melon-Coconut Juice
Allergies: fruit, coconut, dairy.
Ingredients
1 cantaloupe melon
2 passion fruit
8 lychees
200 ml coconut water
50 ml coconut milk
250 ml lychee syrup
500 ml low fat yogurt
Instructions
Scoop out the passion fruit. Cut the melon and place the fruit in the blender with the lychees and passion fruit.
Add the coconut water, coconut milk and lychee syrup. Blend until smooth. Add the yogurt and serve in glasses.
Notes:
- Recipe source ‘Sappen & Shakes’.
- Enough for 4 small glasses or 2 tall glasses.
- Can be served as breakfast.
- The coconut milk and lychee syrup can be replaced by the same amount of coconut water.
- You can omit the yogurt. It will still be perfect as juice, less as breakfast then.
