We love juices and smoothies in our household. So I make them about once a week. The melon-coconut juice is a healthy soft and sweet juice, which every melon and/or coconut lover will enjoy. The recipe is from the cookbook ‘Sappen & Shakes’. They’re actually for a juicer, but since I don’t have one, I usually make it with my blender or food processor.
Paul loves melon and coconut, I’m less of a fan of them. But I love making juices for Paul and Yuri. If you’re looking for a smoothie, check out this Healthy Sinterklaas Smoothie. To accompany the juice bake some White Chocolate Orange Cookies or Chocolate Almond & Cranberry Clusters.
I made a few adjustments to the recipe, since I didn’t have enough of all the items. For the juice I halved the number of passion fruit, added coconut milk and lychee syrup, since I didn’t have enough coconut water. I used canned lychees.
